Ingredients
- 6 chicken thighs
- oil for frying
- 2 chopped onions
- plain flour
- 1 teaspoon cayenne pepper
- 1 tablespoon smoked paprika
- 400g tin chopped tomatoes
- 150ml chicken stock
- 1 chopped green pepper
- 1 chopped red pepper
- salt & pepper
- soured cream
Method
- Heat the oil in a large frying pan and fry the chicken on all sides then transfer them to a casserole dish.
- Lightly fry the onions in the pan and then stir in enough flour to absorb the oil. Add the paprika, cayenne pepper, chopped tomatoes and stock to the onions and bring to a simmer.
- Add the chopped peppers to the chicken in the casserole dish and season well. Add the stock mixture from the frying pan to the casserole dish. Place in the oven at 150c Gas mark 3 for 1 ½ hours.
- To finish add the cream and mix to give the dish a marbling effect. The dish can be served with rice, pasta, new potatoes and green veg.
