Duchesse Potatoes

A great side dish for your next lamb, beef or pork roast. Even better: You can prepare this ahead and freeze it until you need it.

Ingredients

  • 900 g potatoes
  • 75 g butter
  • 3 egg yolks
  • Salt and pepper

Method

  1. Cook potatoes in boiling salted water, strain then sieve.
  2. Beat in butter and egg yolks.
  3. Season well.
  4. Pipe or form into pyramid shapes.
  5. Bake for 20 minutes.
