Ingredients
- 900 g potatoes
- 75 g butter
- 3 egg yolks
- Salt and pepper
Method
- Cook potatoes in boiling salted water, strain then sieve.
- Beat in butter and egg yolks.
- Season well.
- Pipe or form into pyramid shapes.
- Bake for 20 minutes.
A great side dish for your next lamb, beef or pork roast. Even better: You can prepare this ahead and freeze it until you need it.
