Ingredients
- 8 pork spare ribs
- 125ml BBQ Sauce
- 80ml cold water
- 1 tbsp honey
- 1 tbsp worcestershire sauce
- 1 tsp garlic salt
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1 chicken stock cube, crumbled
- Potato wedges:
- 2 medium maris piper potatoes
- 1 ½ tbsp olive oil
- ½ tsp ground paprika
- ½ tsp parsley flakes
- ½ tsp chilli powder
- ½ tsp sea salt
- ⅛ tsp ground black pepper
- To serve:
- 4 sweetcorn cobettes, grilled
- Green Salad
Method
- Ideally the day before:
- : Prepare the BBQ sauce mix by combining the BBQ sauce, water, honey, worcestershire sauce, garlic salt, onion powder, smoked paprika and stock cube together in a small saucepan. Simmer for 5 minutes until thickened, then remove from the heat and cool.
- Pour half of the cooled sauce over the spare ribs and refrigerate, along with the remaining sauce mixture, to marinate overnight.
- On the day:
- [NB: The potato wedges cook at a slightly higher temperature than the spare ribs, so you are best to cook them first and keep them warm whilst you cook the spare ribs.]
- Preheat the air fryer to 200 degrees C.
- Cut the potatoes into wedges (i.e. half lengthways, then half lengthways again, then half lengthways again, to create a total of 16 wedges). Mix all the seasoning together in a large bowl, then add the wedges and stir until the wedges are fully coated with the seasoning mix.
- Place the seasoned potato wedges into the air fryer basket and cook for 10 minutes, then turn them over using tongs and cook for a further 5 minutes.
- Once the potatoes are cooked, remove from the air fryer and keep warm until the spare ribs are ready.
- Now, turn the air fryer down to 160 degrees C.
- Next, line the basket of the air fryer with some tin foil and arrange the marinated ribs in a single layer within the basket, be careful not to burn yourself (i.e. the basket will be hot). Brush the tops of the ribs with some more BBQ sauce mixture and cook for 25 minutes.
- Whilst the ribs are cooking, prepare the grilled sweetcorn and green salad (if desired).
- After 25 minutes, turn the ribs over and brush them with more BBQ sauce mixture, then cook for a further 5 to 10 minutes until they are golden and cooked all the way through. [NB: Thicker ribs will take slightly longer to cook than thinner ribs.]
- Once everything is ready, serve together and enjoy.
