Ingredients
- 2 pork chops
- 2 tbsp brown sugar
- 1 to 2 tbsp olive oil
- 1 tbsp paprika
- 1 ½ tsp salt
- 1 ½ tsp fresh ground black pepper
- 1 tsp ground mustard
- ½ tsp onion powder
- ¼ tsp garlic powder
- To Serve (if desired):
- 250g floury potatoes (e.g. maris piper), peeled and diced
- 3 carrots, peeled and thinly sliced
- 1 small head broccoli, broken into evenly sized florets
- 2 tbsp milk
- 1 tbsp butter
- 2 tsp gravy granules
- Freshly ground salt and pepper, to season
Method
- Pre-heat the air fryer to 200 degrees C.
- Mix together all the dry ingredients in a small bowl.
- Rinse the pork chops with cold water and pat dry with kitchen paper.
- Coat the pork chops with olive oil and then rub the dry mixture all over them, making sure they are well coated on all sides (i.e. using all the dry mix to cover the two pork chops fully).
- Cook the pork chops in the air fryer for 6 minutes at 200 degrees C, then turn them over and cook for a further 6 minutes or so at the same temperature (i.e. until the meat is fully cooked and the juices run clear).
- Once the pork chops are cooked, remove them from the air fryer and leave them to rest in a warm place for 5 minutes.
- Whilst the pork is cooking, make the desired accompaniments:
- Mashed Potato - Pop the potato cubes into a pan of water, bring to the boil and simmer for 10 to 12 minutes until tender. Drain the potatoes, then mash with the butter and milk, until light and fluffy in texture. Season with salt and pepper as desired.
- Carrots and Broccoli - Steam for approximately 5 minutes, until the vegetables are tender.
- Gravy - Prepare according to instructions on the packet.
- Once everything is ready, serve together on warm plates and enjoy.
