A forequarter cut of beef from the breast or lower chest, brisket is primarily used for barbecue, corned beef or pastrami. Pickled in salt, water, and sugar, usually for five days, it is then left out to dry for three days to mature. This tender salt-beef product is perfect for sandwiches.
