As with all rolled joints, a rolled shoulder of lamb is rolled to keep in the delicious juices, ensuring you get every bit of the flavour. It’s best cooked slowly at a low temperature to keep it tender, and despite being seen as a lesser joint than the leg of lamb, if cooked properly it can be a superb piece of meat.

Cooking tips

Shoulder – bone in or rolled – Roast –180c, 350f or gas mark 4. Medium – 25 minutes per 450g (lb) plus 25 minutes. Well done – 30 minutes per 450g (lb) plus 30 minutes.
