A great centrepiece for any formal dining occasion, a rib roast has matured on the bone for at least three weeks, retaining its deep flavour. It’s marbled with fat, and most often served on the bone to keep its taste, although it can also be served boneless. One rib should feed two people.

Cooking tips

Rib Roast – Roast - 180c, 350f or gas mark 4. Rare – 20 minutes per 450g (lb) plus 20 minutes. Medium – 25 minutes per 450g (lb) plus 25 minutes. Well done – 30 minutes per 450g (lb) plus 30 minutes.
