Warm Chicken Salad with Lime and Coriander

Ingredients Cooking

Serves 3 or 4

 

3 or 4 chicken breasts

1kg new potatoes

bunch fresh coriander, chopped

2 limes (you will use the juice and the zest)

1 small onion, finely chopped

2 cloves garlic, crushed

bag of mixed rocket and watercress

salt and pepper

olive oil

Slice potatoes in half lengthways and parboil in lightly salted water

Thinly slice chicken

In a large pan soften onions in a little olive oil on medium heat

Add the sliced chicken and season with salt and pepper

Add the lime juice

Add the coriander and keep warm on a low heat

In a separate pan sauté the potatoes in a little oil until golden

Combine the sautéed  potatoes and the contents of the chicken pan and remove from the heat

Add the rocket and watercress, toss and serve

Garnish with the lime zest
